OK, I couldn’t wait any longer and went for the smaller shoulder steaks last night. They were . . . fabulous! I BBQ’d them over mesquite, and actually found they were very tolerant of cooking to medium rare. They could have been cooked longer and still been great I believe. Anyway, I look forward to my next grass fed lamb dinner! Flavor was about right–not strong, not so mild you couldn’t tell it was lamb.
